Prawn Pesto Salad
Ingredients:
75g ready cooked prawns
100g lettuce
80g peas
80g cucumber
50g halloumi
15g reduced fat pesto
10 sprays low calorie oil
Method:
1. Heat a pan on the hob with some low cal spray oil
2. Chop the halloumi into small chunks add to the heat, cook for 5-8 minutes until edged brown.
3. While the halloumi is cooking, chop the lettuce and cucumber and add to a bowl
4. Add the pesto
5. Add prawns and peas to the frying pan with halloumi
6. Cook for 5-8 minutes or until the peas are cooked
7. Add halloumi, prawns and peas to the salad
8. Mix well and enjoy
