Stuffed Peppers

Ingredients:

2 peppers

150g turkey mince

1/2 onion

200g tinned chopped tomatoes

15g light cheese

10 sprays low cal oil

Method:

1. Preheat the oven to 180 degrees

2. Heat pan on medium / high heat with some low cal spray oil

3. Chop the onions and add to the pan, once softened add the mince, making sure your mixing it well

4. Add tomatoes and seasoning of your choice (I tend to chuck in some taco or fajita seasoning as its easy) and then leave to simmer for 30 minutes

5. While the mince cooks, cut the tops and deseed the peppers and put them in the oven for 20 minutes

6. Once the peppers are soft, add the mince inside, sprinkle the grated cheese on top and put back in the oven for 10 minutes,

7. Take out and serve with some salad.
