"Sausage" & Roasted Veg
Ingredients:
3 heck veggie sausages
200g sweet potato
150g courgette
80g leek
10 sprays low cal oil
Method:
1. Pre heat oven to 200 degrees, line a baking tray with tin foil
2. Boil water in a saucepan,
3. Chop potatoes into cubes and add to boiling water, cover and leave for 10 minutes.
4. Heat frying pan or George foreman and cook sausages for 8-12 minutes, until hot throughout.
5. Chop the leeks and courgette, add oil spray to the tin foil and evenly spread veg and sweet potatoes on the baking tray.
6. Spray some more oil on top and put in the oven for 10 minutes
7. Turn the veggies half way through to brown evenly
8. Once you are happy with the veg chuck it all on a plate and serve
